  • 1 1/2 cups all-purpose flour or cake flour for extra tenderness
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon sugar adjust to taste
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk or milk with 1 tablespoon lemon juice or vinegar
  • 1 large egg room temperature
  • 3 tablespoons unsalted butter, melted plus extra for the pan
  • 1 teaspoon vanilla extract optional for flavor

Method
 

  1. In a large bowl, sift together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract if using.
  3. Gently combine the wet and dry ingredients. Mix until just combined; a few lumps are okay. Do not overmix.
  4. Let the batter rest for 5-10 minutes to allow the gluten to relax and the batter to aerate.
  5. Preheat a griddle or skillet over medium heat. Lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter per flapjack onto the hot griddle. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip carefully and cook another 2 minutes until golden brown and cooked through.
  8. Serve immediately with your favorite toppings such as butter, maple syrup, fresh fruit, or whipped cream.

Notes

Do not press down on flapjacks while cooking, as this can release air and make them less fluffy. Try adding blueberries, chocolate chips, or lemon zest for variation. For gluten-free or dairy-free versions, substitute appropriate flour blends and milk alternatives.
