Ingredients
  

  • 1/4 cup olive oil or avocado oil
  • 1/4 cup fresh lime juice about 2-3 limes
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon ground cinnamon optional for extra depth
  • 1/2 teaspoon oregano or chopped cilantro optional for added freshness

Instructions
 

  • In a medium-sized bowl, whisk together olive oil and lime juice to create the marinade base.
  • Add the minced garlic, chili powder, cumin, smoked paprika, salt, cinnamon (if using), and herbs. Whisk until fully combined.
  • Place chicken pieces in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated.
  • Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, or up to 24 hours for maximum flavor.
  • Cook the marinated chicken using your preferred method: grill, bake, pan-fry, or slow-cook until internal temperature reaches 165°F (75°C).

Notes

For extra juicy chicken, poke small holes into the meat before marinating. Shake or turn the marinating chicken a few times during the process. Use fresh lime juice for the brightest flavor. Adjust chili powder for more or less spice. Store any unused marinade separately if untouched by raw chicken.
